A simple, fresh and delicious salad, I love to eat this in the summer as a light meal. It’s also a delicious side that goes well with many dishes such as fish, anytime of the year.
Did you know that avocados contain more potassium than bananas? An essential nutrient for the nervous system, low levels of potassium can cause stress & anxiety.
1. Prepare the quinoa, as directed on the package.
2. Slice the avocado and pepper then with the spinach mix with the cooked quinoa.
3. Combine all the oil, lemon juice, Herbamare® Original seasoning salt and pepper to make the dressing and drizzle over the quinoa salad. Crumble the feta cheese over the salad, this is optional.
4. Garnish with coriander.
